Father’s Day is just around the corner, which is the perfect time to show dear old dad just how much you care! Celebrating dad with a backyard BBQ can be fun for the whole family. Keep this delicious baby back ribs with Texas blackjack sauce and peach coleslaw recipe in mind that your dad is sure to love.

Ingredients

For the ribs:

  • 3 pounds baby back ribs
  • 1 bottle barbecue sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons instant coffee
  • 2 tablespoons Worcestershire sauce

For the slaw:

  • ¼ cup slaw dressing
  • 1 tablespoon Dijon mustard
  • 4 cups coleslaw mix
  • 2 ripe medium peaches
  • ½ cup chopped red pepper

Directions

  1. Make the ribs. Put the ribs in a large pot with just enough water to cover. Bring to a boil, then reduce the heat, cover, and allow to simmer for 45 minutes, or until the meat is fork tender
  2. Mix the barbecue sauce, coffee, sugar, and Worcestershire sauce in a saucepan. Heat over medium heat, stirring until the coffee and sugar dissolve. Remove from heat.
  3. Make the coleslaw. Stir the dressing and mustard in a large bowl. Add the coleslaw mix, peaches, and red pepper, and toss to mix.
  4. Coat your grill rack with nonstick spray. Heat the grill. Put the ribs, rounded side down on the rack. Brush with sauce, and grill for 3 minutes. Turn the ribs, brush with sauce, and grill for 6 more minutes. Turn ribs again, brush with more sauce, and cook for 3 minutes.
  5. Serve with the coleslaw and enjoy!
