Corned Beef and Cabbage Recipe

There are few better ways to celebrate St. Patrick’s Day than sitting around with all of your loved ones enjoying a delicious plate of corned beef and cabbage. Enjoy this quick and easy corned beef and cabbage recipe so you’ll have plenty of time to spend with your friends and family instead of being stuck in the kitchen!

You will need:

  • 3 pounds of corned beef brisket with spice packet
  • 10 small red potatoes
  • 5 carrots, peeled and then cut into 3 inch pieces
  • 1 large head of cabbage, cut into small wedges

Then you will:

  1. Place the corned beef in a Dutch oven or large pot and cover with water. Add the spice packet that came with the corned beef. Cover the pot and bring to a boil, then reduce to a simmer. Simmer for about 50 minutes per pound, or until tender.
  2. Add the carrots and whole potatoes, and cook until the veggies are almost tender. Add the cabbage and cook for 15 more minutes. Remove the meat and allow to rest for 15 minutes.
  3. Put the veggies in a bowl and cover. Add as much of the broth as you want. Slice meat across the grain and enjoy!
