It’s time to celebrate Valentine’s Day! From flowers to chocolates, there’s plenty of treats to give your sweetheart to celebrate. Mix up your routine and make your loved one a Valentine’s Day treat with this red velvet cookie recipe. It’s a festive, sweet way to show your sweetheart how much you love them. Here’s what you’ll need to get started.
2 (1 ounce) squares unsweetened baking chocolate, broken into pieces
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups all-purpose flour
2/3 cup brown sugar, firmly packed
1/3 cup white sugar
1/2 cup unsalted butter, softened
1 large egg
3/4 cup sour cream
1 tablespoon red food coloring
Cream cheese frosting
Start by preheating the oven to 375 degrees and greasing a cookie sheet. Next, melt down the chocolate by either using the microwave for about 90 seconds or melting it in a heat-safe bowl over simmering water. Stir the chocolate periodically and set it aside once melted.
In a separate bowl combine the baking soda, salt, and flour, and set them aside. In a large bowl, combine the brown sugar, white sugar, and butter. Mix thoroughly until smooth and fluffy. Add in the egg and continue to combine until it’s smooth. Then add in the chocolate, and half of the flour mixture. Add the sour cream and the food coloring and continue to stir. Fold in the remaining dry ingredients until the batter is uniform. Place dollops of batter on a cookie sheet and bake for about 10 minutes. Let the cookies cool.
Once the cookies are cool, make them into sandwiches. Using cream cheese frosting, spread the frosting in between the cookies and then sandwich together. Then, enjoy with your loved ones!
